Tuvar Lilva Kachori Recipe | How to make Lilva Kachori at Home | Uttarayan Special

Tuvar lilva ni kachori is a special snack that is served during the winter kite flying festival called Uttarayan in Gujarat. Kachori is one of the tastiest snacks because of the seasoning in the stuffing and the flaky exterior.

Tuvar Lilva Kachori Stuffing Ingredients:
 2 cups tuvar lilva/pigeon peas
 1 cup green peas
 ¼ cup oil
 1 tsp cumin seeds
 1 tsp fennel seeds
 ¼ cup sesame seeds
 ¼ tsp asafoetida
 ½ tsp turmeric
 green chili paste to taste
 1 tbsp ginger psate
 ½ cup desiccated coconut
 ¼ cup chopped cashews
 1 tbsp raisins
 ¼ cup coriander cumin powder
 1 tsp garam masala
 salt to taste
 ¼ cup sugar
 ¼ cup lemon juice
 1 tsp dry mango powder
Kachori Dough Ingredients:
 2 cups all purpose flour
 salt to taste
 1 tbsp tablespoon ghee
 3 tbsp oil
 1 cup water

Tuvar Lilva Kachori Stuffing Directions:

Roughly grind 2 cups of tuvar lilva and pigeon peas.

Grind 1 cup of green peas using the pulse mode.

Combine the tuvar lilva, pigeon peas, and green peas from steps 1 and 2.

In a pot and gas turned on to a medium flame, add 1/4 cup oil. Also, add 1 teaspoon cumin seeds, 1 teaspoon fennel seeds, 1/4 cup sesame seeds, 1/4 teaspoon asafoetida, 1/2 teaspoon turmeric, green chili paste to taste, and 1 tablespoon ginger paste. Saute for 2 minutes.

Add 1/2 cup desiccated coconut and combine everything.

Add ground peas combination. Combine and saute for 5 minutes.

Cover the pot and cook for 7 minutes on low flame. Stir well.

Add 1/4 cup chopped cashews, 1 tablespoon raisins, 1/4 cup coriander cumin powder, 1 teaspoon garam masala, salt to taste, 1/4 cup sugar, and 1/4 cup lemon juice. Stir well.

Add 1 teaspoon dry mango powder. Fry mixture for 4 minutes. Turn off stove and let it cool.

When the peas mixture is cool form lemon sized balls.

Kachori Dough:

To make the dough, use 2 cups all purpose flour. Add salt to taste to the flour. Add 1 tablespoon of ghee and 3 tablespoons of oil to the flour. Combine everything.

Add 1 cup of water to form a semisoft dough.

Knead the dough for 5 minutes. Cover and keep aside for 20 minutes.

Grease hand and knead the dough for 2 minutes.

Make equal parts for small balls out of the dough.

Roll into smooth balls.

Roll each ball out into a thin puri. Add a pea ball from step 10 in the tuvar lilva kachori directions. Cover the pea ball with the dough. Cut any excess dough off and seal.

Frying the kachori:

Heat the oil on medium flame. Use a toothpick to the oil

Fry kachori. Flip when one side is golden.

Remove from oil one by one.
