Peanut Chikki Recipe A Winter Delight | How To Make Perfect Jaggery Peanut Brittle

Peanut Chikki or Peanut Brittle is a fun treat to have during the holidays. It's a recipe that requires a few ingredients: peanuts, ghee, and jaggery. Although it is relatively simple, it is a popular treat throughout the world.

 1 cup peanuts
 1 tbsp ghee
 1 cup jaggery

Turn the stove onto medium heat. Roast 1 cup of raw peanuts for 8-9 minutes. After about 4 minutes, the skin from the peanuts will pop off. Be sure to stir the peanuts in the pot. After the peanuts are roasted, the peanuts will have brown spots. Remove them in a plate and let them cool completely.

Rub the peanuts between your fingers to remove the skin. Get rid of the peanut skin.

Add 1 tablespoon ghee in a hot pan. Also, add 1 cup jaggery. Keep the stove on low to medium flame. Let the jaggery melt.

When the jaggery starts bubbling, test a small portion of the jaggery. Add the small piece of jaggery to a bowl of water. Take the jaggery out of the bowl. If it is still soft and elastic meaning that you can stretch the jaggery with your hands, then it is not ready. The jaggery will need to cook some more.

After a few minutes, check the jaggery again in a bowl of water. If the piece of jaggery is brittle, then it is the correct texture for the peanut brittle.

Add the prepared peanuts to the pot of jaggery. Combine well.

Grease a container with ghee or butter. Pour the hot peanut mixture in the bowl. Spread evenly. Let it cool for about 15 minutes.

Grease a knife with ghee or butter. Cut the peanut chikki before it cools completely. Otherwise, when the chikki is completely cooled, you will have a hard time cutting the brittle and forming perfect pieces.

Let the peanut brittle cool completely and remove the pieces. It is ready to serve now.
