Falafel and Tahini Sauce

Although falafel is a traditional Middle Eastern food, it is very popular amongst Indian families living abroad. It is similar to Indian lentil fritters made with moong dal whereas falafel is made with chickpeas.

Falafel Balls
 2 cups dry raw chickpeas (uncooked)
 1 cup chopped parsley or coriander or cilantro
 1 jalapeno or hot peppers to taste
 2 big garlic cloves
 1 small onion
 1 tsp cumin powder
 1 tsp coriander powder
 ground black pepper to taste
 salt to taste
 ½ lime juice or lemon juice
 ¼ tsp baking soda
 2 tbsp chickpeas flour or all purpose flour
 oil to fry
Tahini Sauce
 ½ cup white sesame seeds
 1 tbsp oil
 salt to taste
 2 garlic cloves
 ½ lemon juice
 1 cup water
 paprika to garnish

Making falafel balls

Rinse and soak 2 cups of chickpeas overnight or for 6-8 hours

Drain all the water from the chickpeas

Chop parsley, jalapeno, garlic cloves, and onion

Grind onion, parsley, jalapeno, garlic cloves, black pepper, salt to taste, coriander cumin powder, lemon juice, and baking soda. Add chickpeas flour after grinding and soaked chickpeas. Grind into sandlike consistency.

Cover and keep for 30 minutes.

Using ice cream scoop, make round or flat balls. Fry flipping sides until golden.

Tahini Sauce

Roast sesame seeds on low flame for 5 minutes. Grind sesame seeds into a chopper

Add 1 tbsp oil, 2 garlic cloves, 1/2 lemon juice, 1 cup of water, and salt to taste.

Grind finely. Garnish with paprika and parsley
