Eggless Without Condensed Milk Saffron Almond Pistachio Cake Saffron Frosting | કેસર બદામ પીસતા કેક

Badam Pista Kesar is a classic flavor in Ice Cream that is found in India. However, did you know that it also works extremely well as a cake flavor? Today’s recipe will show you how to make an eggless badam pista kesar cake that is absolutely DELICIOUS. If you are a badam pista kesar lover, then you have to try this recipe out!

 ¼ cup almonds
 ¼ cup pistachios
 2 tbsp warm milk with a few strands of saffron
 ½ tsp butter for cake pan
 1 tbsp flour
 2 cups salt used in pans
 1 cup maida or all purpose flour
 ¼ tsp baking soda
 1 tsp baking powder
 ¼ cup butter
 ¼ cup oil
 1 cup sugar
 ½ cup plain yogurt
 ¼ tsp salt
 ½ cup milk
 1 tsp vinegar
 1 tsp vanilla extract

Badam Pista Kesar Cake Directions:

Roughly grind 1/4 cup almonds. Also, grind 1/4 cup pistachios.

Mix 2 tablespoons of warm milk with a few strands of saffron.

Grease cake pan generously with approximately 1/2 teaspoon of butter. Sprinkle the cake pan with one tablespoon flour. Coat evenly and discard any excess flour.

Use a kadai or large pan. Add salt to the kadai. Then, add a smaller pan. Also, add salt to the small pan. There should be approximately 2 cups of salt used in this step for both the pans combined. Cover the pan and turn on the stove to medium to low heat.

To make the dry ingredients of the cake batter, sift 1 cup maida (all purpose flour), 1/4 teaspoon baking soda, and 1 teaspoon baking powder. Mix flour together.

Add 1 tablespoon of the ground almonds and 1 tablespoon of the ground pistachios to the flour. Combine well.

For the wet ingredients of the cake batter, mix 1/4 cup butter and 1/4 cup oil together.

Whisk 1 cup of sugar to the butter and oil mixture. The mixture will be frothy.

Add 1/2 cup plain yogurt. Mix well. Then, add in 1/4 teaspoon salt.

Add flour in parts to the cake batter. Cut and fold method to stir the batter.

Add 1/2 cup milk and to the batter. Fold gently.

Add 1 teaspoon vinegar. Mix well.

Add 2 tablespoons of saffron infused milk to the cake batter. Also, add the strands to the batter. Mix the cake better.

Add 1 teaspoon vanilla extract. Mix the batter.

Pour cake batter in the cake pan. Add cake batter to kadai. Cover the pan. Let it cook for 45 to 50 minutes. Cake is cooked if the toothpick test passes - The toothpick should come out clean if you poke the middle of the cake.

Let the cake cool for 10 minutes and then transfer to a wire rack to let the cake cool completely. Remember, the cake needs to be cooled completely before decorating with frosting.

Strain 2 tablespoons of saffron infused milk.

Whisk 1 cup chilled whipping cream until stiff peaks form.

Add 1/2 cup powdered sugar, 1/2 teaspoon vanilla extract, add 2 tablespoons of strained saffron infused milk. Mix ingredients together.

To decorate cake with frosting:

Add star tip to piping bag. Fill it up with frosting. Cut the piping bag.

Use a turn table and put the cake stand on it. Put a little frosting on the cake stand. Add the cake on top of it.

Mix 2 tablespoons of saffron infused milk with 1 tablespoon powdered sugar. Spread mixture evenly on top of cake.

Spread frosting evenly on cake.

Decorate the cake however you please! I used the shell design to decorate my cake. Then I garnished with powdered almonds and pistachios. Finally, I used whole almonds and pistachios to create a flower design on top of the cake.
