Brown Rice Kheer | Brown Basmati Rice Pudding

Brown rice kheer is a healthier alternative to the classic rice kheer. It can be a diabetic friendly recipe that can satisfy a sweet craving!

 ½ cup brown basmati rice
 2 l or 8 cups milk
  cup sugar or sweetener in desired quantity
 ¼ cup ground almonds
 ¼ cup ground pistachios
 1 pinch saffron
 ½ tsp cardamom

Wash brown rice 2 times. Soak rice 30 minutes.

Drain water from rice and grind coarsely.

On high heat, bring milk to full boil. Stir frequently.

Add ground brown rice and simmer for 20 minutes

Add ground almonds and pistachios. Combine well.

Add a pinch of saffron and cardamom. Stir well.

Add either sugar or sweetener according to your taste. Simmer for 15 minutes.

Boil last 5 minutes on high heat and turn off stove.

Let it cool for 15 minutes to get desired consistency.
