Besan Ke Ladoo

Besan ladoo is an Indian sweet that uses 3 main ingredients - flour, sugar, and ghee. It is fairly easy to make. Today, I am sharing a recipe that converts regular sugar into bura/tagar before adding it into the lad for an authentic flavor and texture. Please enjoy the recipe and share with your loved ones.

Bura/Tagar Ingredients
 2 cups sugar
  cup water
 1 tbsp ghee
Ladoo Ingredients
 1 ½ cups homemade ghee
 4 cups coarse chickpeas flour
 1 pinch saffron in tbsp water
 1 cup almonds
 bura / tagar
 ¼ tsp cardamom
 ½ nutmeg
 pistachios and dried rose petals for decoration

Bura / Tagar Directions

Turn stove onto low heat

Combine sugar and water. Let it stir for 4 minutes.

Once the sugar is completely dissolved, turn on high heat. Stir until the sugar mixture is white

When the syrup is thick, add 1 tbsp ghee. Stir well. Then, turn off the stove and keep stirring vigorously.

Sift the bura and remove the big chunks.

Soak 1 pinch saffron in 1 tbsp water

Turn stove onto medium heat.

Add ghee and let it melt completely.

Then, add flour and stir for 8 minutes. Flour will become a lighter color.

Add 1 cup chopped almonds and sauté for 4 minutes.

Add the saffron water and cook for 2 minutes. Turn off stove.

Remove in a separate pan. Let the mixture cool until you can touch it with your fingers.

Add the bura to the mixture.

Then, add 1/4 tsp cardamom and shred 1/2 a nutmeg. Combine everything.

Use 1/2 cup to measure out the perfect ball size. Roll the mixture into a tight ball.

Decorate the ladoos with pistachios and dried rose petals.
