Baked Mixed Vegetables & Potatoes Cutlet Rolls

 3 cups boiled, peeled & mashed potatoes
 1 cup chopped onions
 1 cup mixed vegetables (corn, green peas, green beans, carrot)
 1 cup cauliflower florets
 1 cup breadcrumbs
 ¼ tsp asafoetida
 1 tsp garam masala
 black pepper to taste
 3 - 4 tsp cooking oil
 1 medium sized lime juice
 1 tsp each of garlic & ginger paste (total 2 tsp)
 salt to taste
 1 tsp cumin seeds
 red chili powder to taste
 1 tsp turmeric powder

Add oil and cumin seeds in a pan.

Let the cumin seeds splatter, add asafoetida, chopped onion and ginger-garlic paste to it. Cover and cook for five to ten minutes. Add turmeric powder, chili powder, salt, garam masala and saute for 2 to 3 minutes. Add mixed vegetables, cauliflowers and 1/4 cup water, cover and cook for 10 minutes.

Mix the cooked vegetables into mashed potatoes and add black pepper, salt for potatoes, lime juice and breadcrumbs. Mix well.

Make the finger size rolls without cracks and put on the greased pan. Bake at 400 degrees for 20 minutes and broil on highest setting for 10 minutes.

Cutlet rolls are ready. Serve pipping hot.
You can serve with Ketchup, green chutney, tamarind sauce etc.
